Ingredients
 150g black beans, 200 G U.S. long grain brown rice, 1 tablespoon vegetable oil, 2 onion, chopped, 3 cloves garlic, minced, ½-1 teaspoon chili powder, ½ teaspoon cumin, 1 can corn (drained 140g), 8 flour tortillas, 80 g grated cheese (e.g. Cheddar), 2 green onions, thinly sliced, 60ml plain low-fat yogurt, 60ml prepared salsa sauce.
Soak beans overnight in sufficient amount of water. Cook them water for 1-2 hours on the following day. Cook rice in salted water at medium heat until all liquid is absorbed and the rice is tender. Heat oil in a large skillet. Saute onions, garlic, chill powder and cumin. Add drained beans and corn, stir once and cook for 2-3 minutes until mixture is thoroughly heated. Prepare tortillas according to package instructions. Spoon some rice mixture down center of each tortilla. Add cheese, green onions and yogurt. Roll up and top with 1 teaspoon of salsa and serve.
Makes 4 servings.
