 500 gr. sugar
¾ cup American rice
25 ml (1/2 teaspoon) saffron
15 ml (1 tblsp) rice flour
½ lemon juice
10 ml (2 teaspoon) rose water
15 ml (1 tblsp) pistachio
Ingredients For Garnish
75 ml pistachio
sour cherry or cherry berries
fresh mint leaves
Ingredients For
Sour Cherry Compote
200 gr. sour cherries (seedless)
250 ml sour cherry juice
10 ml (2 teaspoon) cinnamon
¾ cup sugar
¼ tblsp) corn starch
Combine water and sugar in a saucepan and bring to boil, reduce the heat and leave to simmer for around 20 minutes. Add saffron and rice, stir once. Pour the rice flour in the water and add it to the dessert. Stir well until it thickens. Pour in the lemon juice with the rose water and remove saucepan from heat.
Fry pistachio in a large saucepan until golden brown, then add it to the dessert.
To make sour cherry compote: combine all the ingredients in a saucepan and leave to boil on low heat. Pour the rice dessert into little cups and garnish with mint leaves, cherry berries and pistachio. Serve with compote.
